How to make a rosé without changing the Gimonnet style? In fact, this wine is mostly vinified with chardonnay and a hints of pinot noir to give a light pink colour and to add berries fresh fruit flavours. That means, this cuvée looks like a “Blanc de Blancs” but it is a Rosé d'Assemblage and described by the Gimonnet family as «Un Rosé très osé… »

- 93% Chardonnay aus der Côte des Blancs
- 7% Pinot Noir aus Grand Cru Bouzy, Montagne de Reims
Chardonnay :
- 42% CHOUILLY Grand cru «Ronds Buissons» et «Montaigu»
- 15% CRAMANT Grand Cru «Bateau», «Gros Mont» et «Buissons jeune»
- 10% OGER Grand cru «Champs Nérons »
- 10% VERTUS 1er cru «Justices » et « Faucherets»
- 16% CUIS 1er cru «Croix-Blanche » et « Roualles»
Vinification
Grapes harvested manually, split pressing
- Cold settling
- Temperature controlled alcoholic fermentation
- Malolactic fermentation
- Stainless tank for 6 to 8 months on lees for the Chardonnay
- Cold stabilization (-4°c) and filtration on clay
- Bottling April 2021
- Ageing in bottle for 18 months
- Dosage extra-brut 5 g/l
