100% Chardonnay from the plot le Bourron du Levant in Grand Cru Cramant

Les vieilles vignes du Levant benefit from an exceptional terroir in Grand Cru CramantThey are between 60 and over 85 years old. Their deep roots and the diversity of these old plants contribute to the wine’s complexity. Like the rest of the vineyard, they are cultivated naturally in order to achieve perfect ripeness.

 

Le lieu-dit de cette cuvée est « Bourron du Levant ». Levant means “East,” and this parcel enjoys the first rays of the morning sun. In Cramant, the Levant is very different from the vines on the opposite side of the slope, which face west. The east-facing side of Cramant produces grapes that are particularly rich and powerful - truly a magical place.

 

The grapes are pressed gently, the juice is only lightly settled, then transferred directly into barrels. Natural alcoholic fermentation (with indigenous yeasts) and malolactic fermentation begin spontaneously in Stockinger barrels and large casks. The wines are aged there on their natural lees for the first year, without filtration or fining.

 

Bottling takes place in July, without blending with other vintages - this is a millésime (vintage) and without blending with other terroirs - this is a single-parcel wine. The bottles are then placed in the cool cellars, where the second fermentation and maturation on lees unfold quietly for another eight years.

 

Each bottle is disgorged by hand one year before release. Dosage is very discreet (2g/l), allowing the balance and remarkable length of this cuvée to shine.

 

The Chardonnays harvested from the old vines of Le Levant offer volume, richness, and minerality, with a very long finish - hallmarks of a great terroir…
