How do you make a rosé without altering the Gimonnet style? This wine is vinified primarily from Chardonnay with a hint of Pinot Noir, giving it a pale pink colour and fresh berry fruit aromas. Purists can rest assured: they will rediscover in this wine the signature of Pierre Gimonnet & Fils, defined by purity, freshness, and elegance. “Rosé de Blancs” expresses great Chardonnays, exceptional hosts to a new and fruity note, created by the addition of a hint of Grand Cru Pinot Noir described by the Gimonnet family as «Un Rosé très osé… » (a daring Rosé)

Vinification
Grapes harvested manually, split pressing
- Cold settling
- Temperature controlled alcoholic fermentation
- Malolactic fermentation
- Stainless tank for 6 to 8 months on lees for the Chardonnay
- Cold stabilization (-4°c) and filtration on clay
- Bottling April 2021
- Ageing in bottle for 18 months
- Dosage extra-brut 5 g/l
- Production 15'055 bottles
