Die Cuvée des Crayères wird im Durchschnitt aus etwa fünfzehn Weinen von fünf bis sechs verschiedenen Jahrgängen hergestellt, wobei 80% der Weine in kleinen Eichenfässern ausgebaut werden. 70% Reserveweine sorgen für die gleichbleibende Qualität.

Eric Rodez captures the personality of Ambonnay from his very first cuvée, enticingly generous in its layered complexity of white peach, baked apple and honey, with oak contributing notes of spice.
